Canned banana heart of palm recipe

Ingredients for making preserved banana palm hearts:
4 banana palm hearts
2 cups of hot water
3 tablespoons of white vinegar
1 tablespoon of salt
1 pinch of sugar
How to make pickled banana palm hearts:
First of all, if you don't know how to take heart of palm from a banana tree, check out our article about this matter. When you get the banana palm hearts, cut them into slugs, as in the photo.
Tip: As you cut the heart of palm, remove the lint it releases.
As soon as you cut each piece of palm heart, place it in a pan with filtered water and vinegar. Simmer for 2-3 minutes to eliminate bitterness and prevent it from darkening, then drain.
Tip: Use two tablespoons of vinegar for every liter of water.
Then boil the hearts of palms for the brine: put the hearts of palms back in a pan and add the 2 cups of hot water, 3 tablespoons of vinegar, 1 tablespoon of salt and a pinch of sugar. Simmer for 15 minutes or until tender.
Tip: To check if the hearts of palm are soft, prick them with a fork.
Place the hearts of palm in pots, complete with the cooking water, close tightly and store in a dark place for up to 1 week. Your banana palm hearts preserve is ready! At the end of this time you can use the heart of palm as usual.
